Filipino (Pinoy) Eggplant Omelet - Tortang Talong


This is one of my favorite Filipino dishes...

Here are the ingredients and cooking directions on how to do it:

4 large eggplant
5 tbsps. lard or cooking oil
2 segments minced garlic
1 small onion, chopped
Salt and pepper
2 medium tomatoes, chopped
1/4 kilo ground pork
2 eggs, beaten
1/2 cup bread crumbs


* Broil the eggplants and remove the skin leaving the stem intact. Set aside.

Prepare the filling. Saute garlic, onion, tomatoes and ground pork.

Season with salt and pepper.

When done remove from fire.

To fill the eggplant, salt lengthwise. Put in well beaten eggs and bread crumbs and fry. Serve hot.
